LOADED VEGETARIAN NACHOS

This easy and fast vegetarian recipe for “chili sin carne nachos” is the perfect snack for a football match or relaxed movie evening. We use different kind of ingredients which you might not always find in a chili or in combination with nachos such as coriander or curry. Have a try!

Chili sin carne nachos - vegeterian recipe

INGREDIENTS:

– 2 red onions
– 3 gloves of garlic
– 7 small tomatoes
– 375g young gouda cheese
– 400g of tortilla chips (we like mixing chili + nature ones)
– 1 lime
– a bunch of coriander/cilantro
– 280g of sweetcorn
– 500g red beans (kidney)

– a bunch of green/spring onions
– chili
– honey
– salt & pepper
– 1 tbsp cumin powder or seeds
– 1 tsp curry powder
– creme fraiche or sour cream
– 1-2 avocados

– optional: salsa sauce or jalapeños as toppings

INSTRUCTIONS:

Step 1: Fry the diced onions with some olive oil and caramelize them with 1 1/2 tbsp of honey until they are nicely golden.

Step 2: Add the tomatoes (cut in small cubes) and let it cook until they are becoming soft.

Step 3: Add the chopped garlic and chili + salt, pepper, cumin and a bit of curry powder

Step 4: Add the red beans without its juice and the sweetcorn.

Step 5: Let it cook for some time then season the dish with some more salt, pepper, cumin, chili or other spices according to your taste.

Step 6: Turn the chili sin carne off and add the fresh coriander.

Step 7: Take a big oven dish and start putting some of the nachos in, followed by a layer of chili sin carne, then cheese, repeat and finish with the cheese.

Step 8: Put the chili sin carne nachos in the oven. Wait until the cheese is melted and becomes slightly golden (about 5-10 minutes on grill).

Step 9: To finish add some sour cream, chopped green onions and smashed avocado on top.

Step 10 (optional): Add jalapeños, salsa sauce or pico de gallo on top.

Pico de Gallo: Finely chopp some red onions, coriander and tomatoes. Then mix them in a bowl with fresh lime juice, salt & pepper.
